Grocery Shopping Day- 21 Day Fix

So this week I am going to change up my meals a little bit. Yes!  I eat the same thing every day for one week.  It is what I did when I was competing, and many people who compete do the exact same thing.  What makes this easy for me is weekly prep is super easy and takes the stress out of figuring out a bunch of different foods for the week.

Oh, I hear you.  You just are not one of those people who could eat the same thing every day...  Well, I never thought I was either until I found some yummy recipes that I don't get tired of and change them around week to week.  This really works for me.  I am having results.  And don't knock it 'till you try it!  I save time and money eating this way all the while I am burning up my body fat!  Common, wouldn't you like to eat this for lunch every day?  

21 Day Fix Approved Lunch
Turkey Meatballs
Roasted Fingerling Potatoes
Sautéed Asparagus, Zucchini and Broccoli
Last week I had seasoned ground turkey for lunch and while it was good, I had wished I was eating turkey meatballs so that's what I am cooking this week for my RED Container.  For my Yellow  Container I am going to have wild rice seasoned up with a little 21 Day Fix Seasoning ! Can you say YUM!?!  For my Green Container I am going to have Sauteed broccoli, zucchini and asparagus seasoned with some 21 Day Fix seasoning.  This is making me super excited for my lunches.  I love this food.

21 Day Fix Approved- Chili Relleno Cassarole

This is delicious and a great way to make a healthy, 21 Day Fix approved meal ahead of time to save time and money and energy!

Here is all about the 21 Day Fix Portion Control Meal Plan:

I have adapted it from my Eating for Life cookbook to work with the 21 Day Fix Containers!


21 Day Fix Approved Chili Relleno Casserole 

Servings 4 Prep Time 45 Minutes Cook Time 35 Minutes


12 Ounces Chili - Green, Whole, Roasted, Peeled and Seeded
4 Ounces Cheese - Monterrey Jack, Reduced Fat
1.25 Cup Eggs, Egg Substitute or 2 Whole/4 whites
1/2 Cup Flour - All Purpose
1/2 Cup Milk - Skim
1/2 Cup Reduced Fat Cheese - Cheddar (Sharp)
1 Tsp Seasoning - Chili Powder, Ground
2 Onions - Green, Sliced
1/2 Cup Salsa


1. Preheat oven to 350.

2. Coat 8X8 baking dish with cooking spray.

3. Dry whole chili on paper towel, and lay flat. Shred Jack cheese. Use your 1/2 blue container of cheese to fill each chili. Arrange evenly in dish.

4. Whisk together eggs or egg substitute flour and milk, pour over chilies in dish.

5. Layer lower fat shredded cheddar cheese on top, sprinkle with chili powder and green onion.

6. Bake for 35 minutes until top is golden brown and toothpick inserted in center comes out clean.

7. Cut into 4 portions, top with salsa and enjoy.

1 serving counts as 1 red, 1/2 green and 1 blue

21 Day Fix Meal Plan- Week of 3-30-14

This week I am keeping some things the same, because they work for me and I like and look forward to eating them. I am changing it up with wild rice for my yellow container at lunch and I will probably season that with the all purpose seasoning.   I am extra excited about my dinner this week.  I am going to make it tomorrow and it will be ready for me when I get home from work and I am hungry!  I will save time and the temptation to grab unhealthy food will be gone.

My Favorite Yoga Pants

I have a large selection of workout clothes... some I love, some I can't fit into yet, some I HATE the way they look on me, and then there are those few that I would wear 24/7 if I could.

This brand of yoga pants are just that.  LUCY.  They are so comfortable.  They don't create a muffin top at all.  They flatter my rear and don't make me look heavier than I am.  I am in LOVE!!

They even have a pair they say makes you look 10 POUNDS smaller.  Um, yes please!

I bought a pair to wear when I was on TV with the 21 Day Fix and I was SO happy with the results!

A New Adventure- It's Like Christmas!

After two rounds of the 21 Day Fix workouts I want to change things up with my workouts!  I get bored really easy and I feel that it is time to throw in a challenge.

Enter Les Mills Pump! 

I have had my eye on this program for a year now, but it was a little pricy.  What is Les Mills Pump?  This is the home version of the AWESOME Group X workout you can do at most 24 hour gyms.  It uses a barbell and light weights and high reps to create the "rep effect"  I did one group X class years ago and was sore for days after... so I KNOW it works and will whip me into amazing shape!

The best part.... ITS ON SALE FOR THE MONTH OF MARCH!  So, I had to get it.
I am still using the 21 Day Fix portion control containers.

So arrived yesterday!  My husband got home before me and sent me a picture of the box! 

I was so glad he did not open it up and spoil the fun for me.   The second I got home, I went into our gym (aka- garage) and opened it up!

My Shopping List for the 21 Day Fix Meal Plan

Here is the funny thing. Fabio and I's Food budget for the week is about 100.00 for the two of us. We mainly shop Costco and King Soopers for what we need.

I hear all the time that eating healthy is too expensive. We eat pretty clean with the exception of a Saturday splurge (usually a frozen pizza)

Last Saturday, we purchased PROCESSED food... things like Cheezits, cookies, cereal, frozen prepared meals.... Not healthy at all filled with preservatives, artificial things.
Our bill last Saturday. $250.00.

Folks, eating for convenience (let's face it, we buy these things because they are quick and easy) is WAY MORE EXPENSIVE than buying simple ingredients and making your own food.

Here is my typical shopping list for one week's worth of food for my 21 Day Fix Meal Plan

1 pound Lean Ground Turkey (Foster Farms- Costco. This is a 4 pack or a month's worth ) $17.00/4=  4.25
18  Eggs (also from Costco) $3.75
1 Large Container of 2% Greek Yogurt, Plain (King Soopers) $ 3.85
1 Bag of Organic Frozen Berries (From Costco) $4.80
6 Small Zucchinis (King Soopers ) .99 pound or about $6.50
Bunch of Bananas (Costco) $ 3.65
3 Gallons Almond Milk, Unsweetened (Costco and this lasts for a month) $4.00 or $1 week
1 Jar of Natural Almond Butter (King Soopers for a month) $ 6.70 or $1.75 week
1 large bag of broccoli (Costco this lasts two weeks) $5.35 or 2.70 week
1 Bunch of Asparagus (Costco) $4.75
1 bag of Raw Almonds (Costco this lasts two MONTHS) $ 20.00 or $2.50 Week
1 Bag of Whey Protein (Costco this lasts TWO MONTHS) $ 39.95 or $5.00 Week
Quaker Oats (Costco big box with lasts 4 months) $8.00 or $1.00 Week

Total weekly budget for one person- $45.50 for me to eat healthy. 

Seriously People....  I am never buying the whole, "eating healthy is too expensive again."

21 Day Fix Approved- Berry "Ice Cream"

I don't know about you, but if I am eating healthy every now and then I want a treat!  With the simple meal plan of the 21 Day Fix, you CAN!  I created this 21 Day Fix Approved Berry "Ice Cream" that satisfies my sweet tooth!  It is rich and creamy and delicious.

Berry "Ice Cream"

21 Day Fix Approved Berry "Ice Cream"
1 Red Container plain Greek Yogurt (I used 2%)
1 Purple Container Frozen Mixed Berries (no sugar added)
1 packet stevia or 1 tbsp. Agave Nectar

Place all ingredients in a blender and mix well for a minute or two until thick and smooth.

Serve immediately or freeze for a little while.

21 Day Fix- Making PROGRESS- Pushing Play One Day At a Time

SO I just finished my last round of 21 Day Fix workout... I lost inches but no weight. I am ready to change it up a little.

I just entered the Brazil Butt Lift Summer Booty Challenge. It is 60 days and I really enjoy this workout. It is a no joke, booty blasting workout.

In addition, I am going to do Les Mills Pump!!!! EEEK I am a little worried and totally EXCITED for this. It is only 3 days a week (which will fit nicely into my BBL schedule) It is a crazy barbell workout. One of the workouts has like 500 squats in it!!! It uses lighter weight, but crazy reps to whip your body into shape. It is on SALE this month, and with my 25% coaching discount it was only 150 (regularly 305!!!) BOOM!

I am STILL FOLLOWING the 21 Day Fix Portion Control Meal Plan. this program comes with the containers that you can use for other awesome workouts as well... SO WORTH It!!!

Cant wait to show you all my progress photos. I was able to squeeze into my bikini bottoms I competed in. I have not been able to pull them up over my hips in three years. Not the most glamorous photo I have taken in them, but I was not horrified at my photos either.

MAKING PROGRESS! You gotta eat right, you gotta watch your portions, you gotta push play everyday!!!! If you don't put in the work, you wont get the results!

SQUATS- My Review on how to do This AWESOME Lower Body Work Out


One of the best lower body workouts you can do is a squat.  Doing your squats properly will ensure that you do not injure yourself and that you get the most benefit from doing this exercise.

Squats with Dumbbells

In my video I review how to do squats and show you a couple variations of squats you can do.

Here is a quick squat workout you can do:

Do as many sets as you can for 15 minutes:

No weight
25 Air Squats regular (to challenge yourself, see how fast you can do these with proper form)
25 Sumo Squats  (to challenge yourself, see how fast you can do these with proper form)
25 Plyo Jump Squats (squat low and explode up into a jump.  Land on the balls of your feet, softly)
25 Plyo Sumo Squats (squat low and explode up into a jump.  Land on the balls of your feet, softly, keeping your stance wide on these)

45 second rest and repeat for 15 minutes.

Himalayan Salt- So good For You!

January I did the Ultimate Reset from Beachbody for the first time.  I lost a total of 15 pounds and felt better than I had in a very long time.  It was then that I was introduced to Himalayan Pink Salt.  I was completely hooked on this salt and I carry a salt shaker with Himalayan salt every where I go.  The flavor is delicious.  The minerals in this salt bring out the best flavors of my food and I find that I put less salt on my food.

So I have had a lot of questions about how I use my containers in the day.  I have broken up my meals to contain my purple and yellow containers early in day when I need more energy.

Because I was 30 calories  away from the next meal plan goal, I went ahead and added in one extra RED container to my meal plan. Here is a  calendar of my meal schedule.

Turkey Meatballs- 21 Day Fix Approved

I make these turkey meatballs for my lunches and they are really yummy! Packed with protein and flavor they are a  perfect option for your red container!

1 pound lean ground turkey
1/2 cup oats (I put mine in the blender or food processor to make a little finer)
2 tbsp 21 Day Fix Mediterranean Seasoning (see my blog post with this recipe click here)
1 egg
Salt and Pepper to taste

Preheat oven to 400 degrees.  Place turkey in a bowl with the oats, seasonings and egg.  Mix until incorporated, but do not over mix.  Over mixing will result in a really tough meatball.  Take and make a meatball that is about 1.5 ounces in size.  This should make 15 meatballs total.   Place on a cookie sheet sprayed with cooking spray. Bake for 35-40 minutes or until the temperature of the center of your meatballs is 165 degrees.

Three meatballs is a red container.

21 Day Fix- Zucchini Cashew Soup

Having a hard time eating all those veggies on the 21 Day Fix?  Here is a great and delicious way to eat your green veggies!  Zucchini Cashew soup.  I adapted this from the Ultimate Reset recipe book to work with the 21 Day Fix.

1 large zucchini steamed (fill 2 green containers)
cashews (fill one blue container)
1 cup hot water.
21 Day Fix Mediterranean Seasoning to taste

Combine ingredients in blender and blend until smooth.  Serve immediately.

Yield: 1 serving
1 cup almond milk, unsweetened
1 kiwi fruit, peeled and diced
¼ cup fresh mint leaves
1 tsp. pure maple syrup
1 scoop Greenberry Shakeology
1 cup ice cubes
1. Place almond milk, kiwi, mint, maple syrup, Shakeology, and ice in blender.
2. Cover and blend until smooth.

21 Day Fix- Emotional Eating

EMOTIONAL EATING is something I think most of us can relate to!

You can count on one thing for sure during your health and fitness journey.  That is something WILL go wrong.  Something with your family, your job or anything external!  How you deal with it is going to make all the difference in reaching your health and fitness goals.

For me, I turn to food.  That is just how I have always done it.  Its starts with one day, and pretty soon three months go by and have totally given up on myself and my goals.

Well, not this time.  I am determined and I have made a promise to myself.  By knowing what my triggers are and planning accordingly, I will be able to cope with the stress of trials and be successful with my goals :)

THIS one is my very favorite.  I put this on just about everything.  SO YUMMY

4 Tbsp. dried parsley, crushed
4 tsp. dried onion flakes
2 tsp. dried basil, crushed
21 Day Fix Mediterranean Seasoning
1 tsp. ground oregano
1 tsp. ground thyme
1 tsp. garlic powder
1 tsp. Himalayan salt
1/4 tsp. ground black pepper

Mix these ingredients in a resealable container and you will have it ready!

4 tsp. onion powder

1/4 tsp. ground black pepper
1 tsp. Himalayan salt
